Vegetarian Chili (Vegan Option)

We just got a Cauldron for Halloween and decided to try it out with my mom's amazing chili recipe. Our friend Dave is a vegetarian, so we decided to alter the recipe so he could enjoy as well!

Ingredients:

-7 cups of beans

3 cups Pinto Beans, cooked

3 cups Red Beans, cooked

1 cup Black Beans, cooked

-4 cups of corn, cooked

- 3 Diced Tomatoes, with juices

- 5 chopped jalapenos (seeded for less spice)

-2 onions, diced

-4 bell peppers any color, diced

-8 ounces mushrooms, chopped

-1-2 packages of Chili Mix, hot or mild

-Sour Cream or Greek Yogurt (Optional, omit if Vegan)

-Shredded Mexican Cheese (Optional, omit if Vegan)

-Green Onions, Diced

-Fritos (Optional)


Instructions:

1. Add all the beans to a large soup pot. Using the Chili Bean cans, add two cans of water to the pot.

2. Combine the rest of the ingredients into the soup pot and stir together.

3. Cook on medium high heat until ingredients are cooked though, about 1 hour.

4. Serve topped with sour cream, shredded cheese, and green onions. For a healthier option, use greek yogurt instead of sour cream. Yeen likes to add fritos for a bit of crunch to his chili as well!


If you'd like to make your chili in a cauldron, it will take longer. This large pot of chili took up to 2 hours to cook, it was worth it!
