Spätzle (German Egg Noodles)

Growing up in Germany, Spätzle was a staple in my life. When we moved back to the US I thought good authentic Spätzle was a thing of the past. If only I had known how easy it was back then, I would have been eating this Spätzle every day!


Ingredients:

-4 eggs

-1/3 cup milk

-2 teaspoons ground pepper

-2 teaspoons salt

-2 cups all-purpose flour


Equipment:

-Spätzle Press I use one like this that my mom got in Germany, but you can find cheaper options on Amazon that will work just fine.


Instructions:

1. Combine eggs, milk, pepper and salt in a medium bowl, whisk together the ingredients. Add in flour and stir until it is well combined. The difference between this dough and normal pasta dough is that this egg mixture is very liquid.



2. Bring a large pot of water to boil. Once the water is boiling, add salt to the boiling water. Put the Spätzle Press over the pot and pour half the dough into the cup of the Spätzle Press. Press the dough out into the pot while moving the press around. Keep going until all the dough has been used up.



3. Set the press aside and then stir the Spätzle in the water. They should only need about 2 minutes to cook. Use a slotted spoon to remove the Spätzle from the water.


To make Käse-Spätzle:

4. Place the Spätzle in a pan with shredded cheese, I like using Muenster cheese, and saute until the cheese is nice and melted.





Spätzle is also excellent as a side to Jägerschnitzel with it's mushroom gravy.
