Spicy Ahi Tuna Poke Bowl

When we're in need of a light and fresh dinner, that is also filling and flavorful, this is our go to recipe. These Poke Bowl is quick to make, even though it has lots of steps to go through.





Time: 30 Minutes

2 Servings


Sticky Sushi Rice Recipe

Ingredients:

-1 cups short grain rice

-1 cups water, plus more for rinsing

-1 tbsp rice vinegar

-1 tbsp sugar

-1/2 tbsp salt


Instructions:

1. In a mesh strainer, add rice and rinse with water. Swirl the rice in the water and repeat until the water comes out clear.

2. Place the rice and 1 cup of water in a small saucepan over high heat uncovered. Bring the water to a boil then reduce the heat to the lowest setting and cover. Cook for 10 minutes, remove for the heat and let stand for 10 minutes, still covered.

3. While the rice is cooking, combine the other ingredients in a small microwave safe bowl and stir them together. Heat the ingredients in a microwave for 30 second intervals, stirring between each session. You should need to do this 2-3 times before the ingredients have really combined.

4. Transfer the rice to a wooden or glass bowl. Add the vinegar mixture and with a wooden spoon stir the rice and vinegar together, making sure they have thoroughly combined and coated every piece of rice. Allow to cool to room temperature or store in fridge until ready to use.


Spicy Tuna Recipe

Ingredients:

-1 3-5 oz Tuna Steak, sliced into long strips or small chunks

-1 tbsp mayo

-2 tsp Sriracha

-1 tsp lemon juice

-1/2 tsp chili sesame oil


Instructions:

1. Combine mayo, Sriracha, lemon juice and sesame oil in a bowl. Stir ingredients until mixed completely.

2. Add Tuna to the mixture and stir until each piece of coated.


Dressing Recipe

Ingredients:

-1/2 tbsp Unagi Sauce (Eel Sauce, We found this at our local Kroger Supermarket near the Sushi.)

-1 tsp Wasabi

-3 tbsp Low Sodium Soy Sauce

-1 tbsp Hoisin

-2 tsp Ginger Paste

-1/2 tsp Fish Sauce

-1/2 tsp Chili Sesame Oil


Instructions:

1. Combine all ingredients into a small bowl and mix with a fork until the mixture is smooth. Adjust flavor by adding more of any of the ingredients. I personally prefer more Wasabi and Unagi Sauce.


Other Ingredients:

-1 Cucumber, sliced into long strips

-2 Tomatoes, diced

-1-2 cups Mixed Spring Greens, or other Leafy Greens

-1 Avocado, sliced lengthways

-Sesame Seeds


Instruction for Poke Bowl Construction:

1. Start by layering half of the rice on the bottom of each bowl. Add the Leafy Greens of your choice as the next layer. Then in four sections, add the half the cucumber, 1 tomato, half the avocado, and half the tuna mixture to each bowl. Top with half the dressing sauce and a healthy amount of sesame seeds.

2. Ready to serve with a fork or chopsticks!
