Salmon with Smashed Potatoes and Green Beans

Ingredients:

-3-4 medium potatoes, or 5-6 small potatoes

-1 cup water

-Canola Oil, Sprayed

-2-3 (6-8 oz) Salmon Fillets

-1 Tbsp olive oil

-1 tsp salt

-8 oz Green Beans, trimmed ends


Instructions:

  1. Preheat oven to 425 degrees F.

  2. Microwave potatoes and cup of water in a microwavable bowl, covered. Microwave potatoes for 5 minutes. When finished, move potatoes to a place and let cool.

  3. Spray a baking sheet with canola oil. Place salmon fillet on the baking sheet and drizzle with oil.

  4. Using a meat tenderizer or a cup, gently crush the potatoes. Drizzle oil over the potatoes.

  5. Sprinkle salt and pepper on top of the potatoes and salmon. Bake at 425 degrees for 5 minutes, then remove from oven.

  6. Add green beans to the baking sheet and season with some more salt and pepper. Bake again at 425 degrees. After 10 minutes, turn on the broiler to high and broil about 2 minutes.

  7. Serve with the only sauce you will ever needs (recipe below)!

Sauce

Ingredients:

-1/4 cup mayonnaise

-2 Tbsp chopped fresh flat leaf parsley

-1 Tbsp chopped shallot

-1 Tbsp lemon juice

-2 tsp stone ground mustard


Instructions:

Stir together all ingredients in a small bowl and enjoy!
