Salmon Fish Sticks

Fish & Chips is a very traditional recipe. I always wanted to like it, but but it was never truly good to me, until I started making the fish with Salmon and dipping it in Sweet Thai Chili Sauce, now I want it all the time. So if you don't like traditional cod Fish & Chips, or if you do, you should definitely try this new take on a classic!





Salmon Fish Sticks

Ingredients:

-2 Salmon Fillets, skinned and cut into 3 inch strips

-1 cup flour

-2 eggs, whisked

-1 cup panko

-1 tsp Italian Seasoning

-1 tsp paprika

-2 cups vegetable oil

-Sweet Thai Chili Sauce, for dipping


Instructions:

1. Cut the salmon into desired sized strips, I like 1 inch thick and 3 inches long.

2. Put the flour, egg, and Panko into three separate shallow dishes. Mix Italian Seasoning and paprika in with the Panko flakes.



3. Dredge the salmon sticks first through the flour, coating completely. Then dip the salmon sticks into the egg, coating completely. Lastly, dredge the salmon through the panko, coating completely.



4. Pour vegetable oil into a large and deep skillet. Make sure you you have enough oil that the salmon will swim in it, it does not need to be submerged. Heat the oil to 300 degree F. Fry the salmon for about 1-2 minutes on both sides until it's a nice golden brown color. Put the salmon on a plate lined with paper towels to soak up extra grease.

5. Serve immediately while hot with Sweet Thai Chili dipping sauce.
