Ramen Noodles

Top Ramen is our favorite thing to eat on a lazy evening, fancy Ramen is always something we look forward to on nights out, so learning to make Ramen Noodles from scratch was a top priority! This recipe is tasty and very similar to Italian Pasta recipes, they even look just like spaghetti, but there are a few extra ingredients that make them Ramen Noodles!


Equipment:

-Pasta Drying Rack, we use a removable curtain rod in between our archway.

- Pasta Extruder (This one also requires a Kitchen Aid Mixer.)





Ingredients:

- 3 cups all-purpose flour

-1 teaspoon fine sea salt

-1 teaspoon baking soda

-2 large eggs

-1/2 cup water


Instructions:

1. In a large bowl, whisk together flour, salt and baking soda. Create a volcano in the center of the flour. Crack the eggs into the volcano and add the water as well.

2. Once the eggs are in the volcano, it's important to mix the egg yolk and white together without too much leaving the volcano. I like to pinch the yolks and then mix it together with my finger. Traditionally, you would just use your finger and swirl the yokes around until the mix with the whites.

3. When the yolk and whites have combined, start mixing the egg into the flour. You will knead the dough and egg together. I do this all in the bowl, if some of the flour doesn't combine it's ok to just leave it out.

4. After the dough is combined into a ball, set the bowl aside. Use a handful of flour to dust the surface of your countertop. Knead the dough together a bit more, adding more flour if the dough is too sticky.

5. Turn the dough ball into a rectangle shape. Cover with plastic wrap and set in the refrigerator for 1 hour.

6. After an hour, take the dough out and cut into smaller pieces that you can push through the pasta extruder.

7. Pasta Extruders, at least the one we use, work best when you use dryer dough. If while you are kneading your dough it feels sticky, spend time kneading more flour into the sticky parts.

8. Break your dough into smaller pieces and push the dough through the extruder. Make sure you are using the spaghetti shape plate while doing this.

9. As the noodles are being pushed out of the extruder, cut them off at the length you want them. Then you will need to hang them. When you are hanging them, leave a small amount of space in between the noodles, if they are piled on top of each other, they will stick.you can also twirl them if you have enough flour on the noodles.

10. Add your ramen noodles to a pre-made pot of broth with other ingredients ready to go. You only want them to boil and cook for about 2-3 minutes or they will get soggy. For Ramen recipes, click the links below.
