These Tortellini are so delectable, they are worth the effort. Tortellini was never one of my favorites until we learned how to make these little guys. If I may say so myself, these are a thousand times better than store bought Tortellini.
Ingredients:
Pesto Filling:
-3 cups Ricotta Cheese
-3/4 cups Parmesan
-1/2 cup Pesto
Tortellini Coating:
-1/2 cup Pesto
-1 cup reserved Pasta Water
-Parmesan to garnish
Instructions:
1. Make the Pasta Dough, roll out the dough, cut the dough into squares. More detailed instructions here.
2. Mix together the Pesto Filling and fill each Tortellini, as shown in this post.
3. Cook the Tortellini in boiling salt water in a large pot. Drain the Tortellini, reserving a cup of pasta water for later.
4. Return the Tortellini to the pot and add the rest of the Pesto, stir to coat the pasta. If the Pesto needs help to coat the Tortellini, add pasta water, a little at a time, stirring to coat.
5. Serve with Parmesan and enjoy!
