Homemade Tomato Sauce

In an effort to be more sustainable, I wanted to learn how to make my own tomato sauce from fresh tomatoes, then I avoid the use of cans and am left with only tomato vines afterwards. This recipe is tasty and pretty easy, it will make a lot of sauce as well!


Ingredients:

-20 vine ripe tomatoes


Instructions:

1. In a large pot, boil 12 cups of water. In a large bowl, prepare an ice bath by filling the bowl with ice and water. Place bowl near the boiling water.

2. Using a small knife, core out the stems of the tomato and on the opposite side, cut a small and shallow 'X' so that the tomato skin can peel off easily.

3. Working in batches, drop several tomatoes into the boiling water. Let the tomatoes boil until the skin is wilted and ready to peel off, about 2 minutes for each batch of tomatoes.

4. Using a slotted, scoop out the tomatoes and put them into the ice bath until cooled, 1 minutes.

5. Take the tomatoes out of the ice bath and peel the skin off and discard. If you boiled the tomatoes long enough, this should be easy.

6. Put the peeled tomatoes into a large food processor. Pulse the sauce until it reaches your desired consistency, pulse longer for smooth sauce and pulse less for chunky sauce.




7. Put the sauce back in the large stockpot and bring to a boil. Let simmer until the sauce has reached your desired taste and consistency, stirring frequently. It will take a while, about 1-2 hours until the raw tomato taste has softened.



8. Refrigerate and use within the next week or freeze and use on a 6 month period.
