Gnocchi

When you're craving starches and pasta, Gnocchi is a delicious and easier than you think. The starch from the potatoes is great at absorbing flavor from your favorite sauces and the ridges from the gnocchi help the sauce cling.


Ingredients:

- 2 potatoes, large yukon or medium russet

-2 cups flour

-1 tsp salt

-1 egg


Instructions:

1. In a large pot, boil salt water over high heat. Peel potatoes and add them to the boiling water. Cook the potatoes until the are fork tender. Drain the potatoes and mash completely with a fork or potato masher.

2. In a large bowl, mix mashed potato, flour, salt, and egg. Knead the dough together into a large ball. Roll out medium portions of the dough into long snakes and a floured surface. Cut snakes into 1/2 inch pieces.



3. Roll out each piece of gnocchi using a fork or gnocchi board to indent the gnocchi. This will allow the sauce to cling to the gnocchi.



4. Bring a new pot of salted water to boil. Drop each gnocchi into the water and cook for about 3-5 minutes or until the gnocchi rises to the top, drain gnocchi and serve with your favorite sauce, pesto, red sauce, vodka sauce or cheese sauce are all excellent with gnocchi.
