Fettuccine Alfredo

Updated: Jul 23, 2020

Making Alfredo sauce is a lot easier than you think. It's made out of three main ingredients, heavy cream, Parmesan cheese, and butter. You can also add in seasonings of your choice like garlic, parsley, or crushed red peppers. Then you can add in your favorite proteins and vegetables at the end like chicken, shrimp, spinach, or broccoli. Once you have mastered the base Alfredo recipe, you can customize it to fit you needs!

Ingredients:

-1/2 stick of butter

-3 cloves garlic, minced

-1 pint heavy cream

-Salt and Pepper to taste

-1 tbsp Crushed Red Pepper Flakes (Optional)

-1 cup shredded Parmesan cheese

-1-2 cups Pasta Water, for thinning

-2 tbsp fresh chopped parsley

Instructions:

1. Melt butter in a small saucepan over medium heat. Add garlic and cook until fragrant.

2. Pour heavy cream into the mixture and bring to a simmer. Add salt, pepper, and red pepper flakes. Stir seasonings into the cream.

3. Add Parmesan and whisk cheese and cream together until the cheese has melted.

4. If the sauce it too thick or rich, add in pasta water a little at a time. Make sure to whisk the sauce as you pour in the water to make sure it is completely incorporated.

5. Finish off the Alfredo with some fresh parsley and serve over your favorite pasta or as a pizza sauce. I prefer fettuccine with Alfredo.

6. If you want a vegetable (Broccoli, Spinach) or protein (Chicken, Shrimp) in your Alfredo, cook beforehand (unless it's spinach) and add to your Alfredo before your pasta, stirring to coat everything.
