Chicken Parmesan with Spaghetti and Red Sauce

Serves 4

For the Chicken Parmesan

Ingredients:

- Vegetable Oil

- 2 Skinless Chicken Breasts, butterflied and separated

- salt and ground pepper

- 1 cup all-purpose flour

- 2 large eggs, beaten

- 1 cup bread crumbs

- Chopped parsley


Instructions:

1. Pull out one large piece of beeswax wrap and place 2 chicken breasts on the plastic about 1 inch apart. Place another piece of beeswax on top. Using the flat side of a meat tenderizer, pound the chicken until it is about 1/4 inch thick. Repeat with the other chicken.

2. Measure the flour, eggs, and bread crumbs into three separate shallow dishes. Dredge the chicken through the flour first, then the eggs, and lastly the bread crumbs, coating the breasts completely in all the ingredients on both sides and the edges. Be aware not to push the bread crumbs into the meat. Shake off the extra crumbs and be ready to fry immediately.

3. Pour vegetable oil into a large and deep skillet. Make sure you you have enough oil that the chicken will swim in it, it does not need to be submerged. Heat the oil to 300 degree F. Fry the chicken for about 2-3 minutes on both sides until it's a nice golden brown color. Put the chicken on a plate lined with paper towels to soak up extra grease.

4. Depending on how many chicken Parmesan you are making, you may want to keep them warm in the oven. 170 degree F is a good temperature to keep your chicken warm.


For the Red Sauce

Ingredients: -2 tbsp olive oil -3 cloves garlic, minced -1 tbsp crushed red pepper flakes -1 quart Homemade Tomato Sauce -6 oz Tomato Paste -1 tbsp Italian Seasoning -Salt and Pepper to taste

Instructions:

1. Add Tomato Sauce, Tomato Paste, Italian Seasoning and salt and pepper. Bring to a simmer, then turn down the heat to lower. Let cook for about 15 minutes.

Combining:

Ingredients:

-4 Provolone cheese slices

-2 cups shredded Parmesan Cheese

-Fresh chopped Basil


Instructions:

1. Heat oven to 350 degrees.

2. Grease a deep pan and ladle sauce into the bottom. Add chicken breasts in one layer to the pan. Ladle more sauce on top of the chicken. Place one slice of provolone on each chicken breast. Sprinkle all the Parmesan cheese and basil on top.

3. Cook Chicken Parmesan until the cheese melts, about 5-10 minutes.

4. On individual plates, serve desired amount of spaghetti. Top with a generous ladle of red sauce. Put one chicken breast on top of the sauce and serve immediately.
