Baked Gyros in Creamy Metaxa Sauce

In Germany, we would go to the local Greek Restaurant and have this amazing dish with fries. For the longest time, I thought this was an authentic Greek recipe and became so frustrated that I couldn't find it anywhere outside of Munich, only to find out that this is traditional Greek food, the same way Tacos are traditional Mexican food. This German-Greek recipe is one to die for nonetheless.





Ingredients

For the Gyros:

-1 lb pork or lamb, sliced into thin strips

-1 onion, slice into thin strips

-3 tbsp olive oil

-2 tbsp fresh chopped oregano

-2 tsp fresh chopped thyme

- 1 tsp rosemary

-1 tsp smoked paprika

-1 tsp garlic powder

-1 tsp ground coriander

-1 tsp cumin

-1/2 tsp chili flakes

-Salt and Pepper to taste


For the Metaxa Sauce:

-6 oz tomato paste (if you can acquire ajvar, 3 oz tomato paste and 3 oz ajvar)

-8 oz creme fraiche

-8 oz heavy cream

-1/4 cup Metaxa


For Baking:

-2 cup grated cheese, I like to use Gouda or Mozzarella

- Fresh chopped Parsley


DON'T FORGET FRIES, either homemade or frozen!


Instructions:

1. Slice the onions into thin strips and put them in a bowl that has a cover. Then slice the meat into inch long pieces and put them in the same bowl.

2. Add the oil and all the spices from the gyros recipe into the bowl and mix until the meat and onions are well coated in the spice mixing.

3. Cover the bowl and refrigerate to allow the meat to marinate for at least 12 hours.




4. After the meat is marinated and you're close to eating. Take the meat out of the refrigerator. Preheat the oven to 400 degrees.

5. Heat a large skillet over medium high heat. Add the gyros meat and onions and allow all the meat to sear for 3 minutes on each side.



6. Grease a casserole dish. Then remove gyros from the pan and spread around the casserole dish and set aside.


7. Using the same skillet, bring the heat to medium high and add the tomato paste and cook in the meat juices. Stir until the tomato paste is a bit more saucy.



8. Stir in creme fraiche and heavy cream and whisk until the tomato paste and creme fraiche are combined. Add in the Metaxa and bring to a boil. Allow the liquor to boil off, about 5 minutes.



9. Add the Metaxa sauce and 1/2 cup of cheese to the meat in the casserole dish and stir to combine.

10. Top the dish with the rest of the grated cheese and fresh chopped parsley and then bake for about 15 minutes, while also cooking french fries. After 15 minutes, broil the gyros for 3 minutes.

11. Serve hot and over fries!
